Chippewa Valley Farms Cheese is an all-natural line of cheese made of milk selected from the best small dairy farmers of Wisconsin. Unlike many other cheeses, Chippewa Valley Farms' cheeses have no fillers or additives (MPC or added Casein) to get in the way of the taste and texture. Our old world style cheese is made the way cheese was meant to be made- naturally!
Why does our cheese taste so much creamier and more flavorful than most?
It's good to understand where we are different.
- Milk has an integrity quality similar to fresh cut flowers. The only difference is that you can visually see flowers wilt.
If milk is several days old, you can't see any difference by looking at it, the difference isn't really noticed until you make something out of the milk, like cheese. Cheese would "wilt", so to speak, if it were made from milk that was several days old. Many cheese makers buy milk several days old product at a tremendous discount. To keep this cheese firm, casein (a protein taken from milk primarily from New Zealand whose primary use has been as an industrial strength adhesive) is added. The casein (glue) helps the cheese to firm up, and as an added benefit, significant less milk is needed to make the same amount of cheese. Of course this doesn't lend itself to making a better tasting cheese.
Chippewa Valley Farms' cheese uses only fresh milk and does not use casein in our products.
- We also don't add any MPCs to the cheese either (milk protein concentrate) just good, fresh, wholesome milk.
- All of our cheese is made the old time way in open vats instead of the computerized closed vat. With open vats the eye of the master is still very important, the difference lends itself toward a superior tasting cheese.
